Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 min. Mix the flour and salt in a food processor to blend. Blend in the oil while machine is running. Also while it is running, add yeast mixture and blend until the dough forms. Turn out the dough onto a lightly-floured surface. Knead until smooth, about 1 min. Transfer the dough to a large oiled bowl and cover with plastic wrap. Set aside in a warm, draft-free area until it doubles in volume, about 1 hour. Punch the dough down and form it into a ball. It can be used immediately or stored for a day in the refrigerator. Make sauce: In a pan, heat 3tbs oil and add onions. Cook until tender and almost brown. Add tomatoes, wine, salt, thyme, and majoram. Heat to boil, then simmer to desired consistency.Make Pizza: Cut dough in half. Store other half. Roll out dough. Add sauce, leaving a 1' border around edge. Add pancetta. Add 3 slices Applesgate Provolne.
