Cook 200g of bacon. Drain.Boil peeled & cubed sweet potato until tender. Drain water and mash. Add oil to large saucepan. Add celery, onion, corn and red pepper. Saute over medium-high heat for 5-10 minutes. Stir bacon and milk into same saucepan. Add mashed potato and mix well. Season with salt & pepper and hot sauce. Stir to combine.
