Crack open a nice frosty beer and turn on some background music or football game. Get 3 qt saucepan melt butter, med/medhi heat. Stir in onion, cook over medium heat until tender (5min). Stir in flour, stir for 2 mins, add potatoes, milk, S&P. Cover, low heat, stirring occasionally over 30 mins while sitting on couch drinking beverage and watching game. Once potatoes are tender add sausage and cheese, simmer 5 more minutes and voila! Great in a bread bowl or with a hearty semolina or sourdough for dipping.
