3 stalk, Celery, chopped
4 cloves garlic
2 bay leaves
2 small or 1 large ham hock
3 serving Andouille Smoked Sausage, sliced
season to taste with salt and cajun seasoning

Here is how you make Carolyn's Red Beans and Rice:

sort, and rinse beans. soak overnight, covered by at least two inches of water.in morning, in a heavy bottomed dutch oven, try out sausage and remove from pot with slotted spoon. set aside. to sausage drippings add 1/2 tbsp butter and melt. then saut? chopped onions, green onions, garlic, bell pepper, celery. drain and rinse beans. add to veggies. then add 6 cups water, and ham hocks. bring to boil, then lower to simmer and cook at least 3-4 hours. add water as needed. in the last 30 minutes, remove ham hock, pull any meat off bone and add back into beans. stir in cooked sausages and any desired seasonings.To serve, remove bay leaves and ladle over white rice.
