In a large pot bring water and rice to a boil. Cover and lower heat to a simmer. Allow rice to simmer approximately 15 minutes or until desired softness. In a seperate bowl combine milk, eggs, and sugar. Wisk until thoroughly combined. Temper the mixture with a portion of the rice. Add the tempered mixture back into pot. Allow to simmer for about 5 minutes. Serve hot or cold with an extra spash of milk and a sprinkle of cinnamon.
