1 tbsp butter
3 cloves garlic
1/s tbsp chipotle pepper
3/4 c cooked white rice
4 large eggs
1 green onion
pinch of fresh parsley
1/2 c sharp cheddar
1/2 tsp chipotle chili powder
1/2 tsp ground cumin
1/2 tsp paprika
10 corn torillas (6-7" diameter)

Here is how you make Surprise Egg'n'Rice Enchiladas:

Make it!1) Place the butter in a non-stick vessel over medium heat.2) Dice the garlic and throw it and the chipotle in with the butter.3) When the garlic is translucent add the white rice and cook until the rice is translucent and soft.4) Remove the rice into a bowl and crack eggs into the vessel. There should be enough butter left over in the vessel to keep the eggs from sticking.5) Add the cumin, paprika, and chili powder to the eggs. Stir occasionally until the eggs are cooked through.6) Remove the eggs from the vessel and set aside.7) Rinse the black beans.8) Wet the corn tortillas, stack them, and microwave twice for about 30 seconds each time.9) In an appropriate baking vessel (8" x 14" cake pan worked well for me) lay out a tortilla and add 1 tsp each of rice, eggs, black beans, and chipotle tomato sauce. Roll and set in baking vessel. Fill about 10 tortillas in a similar manner.10) Spread the remaining eggs and rice over the finished enchiladas.11) spread about 9 tablespoons of the chipotle tomato sauce over the enchiladas.
