1 can black beans rinsed and drained
1 cup bell pepper (1/3 of green, yellow, red)
1/2 cup red onion
1 jalapeno pepper, seeded and chopped
1/4 cup chopped fresh cilantro

1 TBL Extra virgin olive oil
2 TBL Lemon juice (juice from one lemon)
1 clove garlic
salt and pepper to taste

Mix veggies in bowl. In seperate bowl wisk together oil, lemon juice, garlic and spices.

Mix all together and chill for 2 to 24 hours.

Eat with tortilla chips, or put on anything to add flavor.
