Here is how you make Roasted Broccoli Couscous Salad:

Preheat oven to 425. Cut the broccoli into spears and coat with 2 tsp olive oil, salt and pepper optional. Roast in oven for 20 minutes. Meanwhile bring 1/2 cup of water to a boil, pinch of salt optional. Stir in 1/3 cup of couscous and cover. Remove from heat and let stand for 5 minutes.
