Peel cucumber and slice in half length wise. Scoop seeds out of cucumber then slice into large chunks. Sprinkle cucumber pieces with salt and let them sit in a strainer for 30 minutes to help draw out the water. Rinse the salt from the cucumber pieces and pat dry. Place the cucumber pieces, garlic cloves and lemon juice in a food processor and process until chopped and blended well. Mix cucumber mixture with the Greek yogurt.
