The ingredients for No Tomato Sauce are:

1/2 tsp olive oil
Two 2" beets (appx 164 grams)

1 tbsp Olive Oil
3 medium carrots, chopped
1 medium celery stalk, chopped
1 parsnip (about 9" long), chopped
4 cups chicken or vegetable broth
1 large or two small sweet potatoes, peeled and cubed (about 260 grams)




How Do I Make No Tomato Sauce?

Here is how you make No Tomato Sauce:

Preheat oven to 400? F.Cut ends off of beets. Drizzle with about ? tsp olive oil. Wrap in foil. Place foil packet onto cookie sheet. Bake for 2-3 hours until beets are very tender. Once cooled, peel off skin and cut beets into medium cubes. Set aside.Heat 1 Tbsp olive oil in heavy-bottomed pot over medium heat. Add carrots, celery, and parsnip. Saute about 10-20 minutes. Add cubed sweet potatoes and all 4 cups broth. Cover and bring to boil. Reduce heat to low and simmer about 30 minutes or until sweet potatoes are fork tender.Remove from heat and add beets to pot. Once at a just warm temp, use a stick blender to puree the sauce until smooth. If the sauce is too thick, gradually add more broth until it is the consistency you are going for. Serving Size:?10-12
