Here is how you make Cheddar Bacon Cauliflower "Grits" with sausage:

Put celery and garlic in food processor and set aside. Put cauliflower in food pro and set aside in another bowl. Small dice bacon and render in soup pot. Remove with slotted spoon and reserve. Add celery and garlic and onion powder. Sautee till soft. Add the cauliflower and generous amounts of S&P. Add a half cup of water and steam with the lid on for 5-10 minutes. Sautee sausage in a separate pan and reserve once browned. Once the cauliflower is soft, add milk and hot sauce, then blast it with a boat motor till all the bigger pieces are gone. Increase heat to med-hi and keep it moving with a whisk or spoon. Whisk flour in a little milk or water till smooth and whisk that into grit mixture. Once it boils, cut the heat and add grated cheese. Whisk till smooth.
