2 cup, chopped or sliced Red Ripe Tomatoes
4 packet (6 fl oz prepared) Chicken bouillon
3 tsp Thyme, fresh
5 medium (4-1/8" long) Scallions, raw


How Do I Make Authentic Seafood Gumbo?

Here is how you make Authentic Seafood Gumbo:

Cut the andouille into .5 inch slices. Cook in a cast iron skillet until seared on each side. Place andouille to the side. In a calderon, pour oil and heat on medium. When the oil is hot, add peppers, onions and celery. Stir until onions are transparent. Sprinkle the flour evenly over the veggies and mix around thoroughly. Sprinkle with salt, black pepper, cayenne & garlic powder. When the mixture looks like a dark peanut butter color, add tomatoes and garlic. Stir thoroughly and then add water and the bouillon. Add thyme and bring water to a slight boil contstantly stirring. Add crab meat, shrimp and andouille. Add a bay leaf and sassafras herb. Stir and then cover. Reduce heat to low and cook until shrimp is completely pink and kind of firm.
