You can leave out the salt and allow to mature for several hours before serving, and sugar subs also work well or just use the real thing. The count here uses all regular products no sugar or salt subs and 2% milk. Feel free to substitute for ingredients you need to limit in your diet. I have made this using sugar and salt subs and with no salt or sub added with; it's all good just prepare it and let it set longer - if allowed, this is very well received. Very finely grate a quarter of an onion (2 TB) keeping the juice to add to the mix, and shred the carrots as fine as you like them, the finer the better as they add color and sweetness. Put this mess into a large bowl and mix together ( including onion juice).Now salt the mixture if desired using amount in recipe (I don't) and add the pepper stipulated in recipe or to taste (like me) and re-mix.Put everything else into a blender, a food processor (on low) or just put it into a bowl and mix by hand with a whip mixing on high hand speed until well mixed.
