Place in a large pot with 8 cups of fresh water. Cook on medium heat, stirring occasionally.Step 3: In a large saut? pan, put the olive oil in and heat over medium heat. Put in the onions, garlic, and parsley and saut? until soft. Step 4: Add onion mixture to black beans, along with the bay leaves and black pepper.Step 5: Cut the kielbasa in half, then in half again (quarter it), then cut into bite sized chunks. I had 3 links of kielbasa, and I used all 3 of them in this recipe. Traditionally you would use a ham hock. You could also used diced ham. Add kielbasa to the pot.Step 6: Simmer over low heat, stirring often for 2-3 hours, until the soup thickens. Keep the lid of the pot tilted to allow steam to escape, and check the level of soup. If you need to add water, add it 1 cup at a time. Add the sherry last, and simmer for 5 minutes more.
