This bean soup is a combination of several slow cooker bean and bean soup recipes that I cobbled together to use a beautiful heirloom bean blend I found at Costco, but I think you could use just about any beans - navy, cannelini, black, pinto, etc. You can make it vegetarian by using olive oil to cook the beans and Rapunzel vegetable bouillon (or your favorite bouillon) to make the soup, or for non-vegetarians you can use bacon fat to cook the beans and chicken stock to make the soup (or a combination thereof - I used bacon fat and the Rapunzel vegetable bouillon).

Here is how you make Brittany's Bean Soup:

Place beans and 2 qt water to a boil. Roughly chop 2 onions. Once beans come to a boil, add beans and water to large slow cooker with onions, garlic, salt and 4 tbsp olive oil (or bacon fat for more flavor). Ok to omit some of the water if it won't all fit. Cook on low 10 hours.Place cooked beans in large saucepan/stockpot (about 8 cups beans). Add 4 c vegetable bouillon (from 2 Rapunzel cubes) or chicken stock. Add thyme, rosemary, and lemon juice. Bring to a simmer; simmer gently for 10 minutes to blend flavors.
