Red Cabbage - 1/4 of a large one - finely chopped
Zucchini - 1 medium - sliced
Small red beans - 2 cans
Onions - 2 small ones
Red peppers - 0.5 medium
Chicken bouillon cubes - 2
Tomatoes - 3 plum (could use 2 red ripe) - sliced or chopped
Canola oil - 2 Tbsp
Cayenne pepper - a pinch (be careful, could be too spicy!)
Salt and pepper - to taste (doesnt need much with the bouillon)
Could add any other seasonings you like - we love the Badia complete seasoning and we added a bit

Here is how you make Ceci Red Bean Soup - Low cal/lots of fiber:

Heat the oil on low heat in a pot and add the onions and the peppers - cook slowly until the onions are transparent and the peppers are tender (be careful it doesnt get fried - could use cooking spray instead of oil). Add all the veggies and about 5 cups of water. Once the water is hot add the chicken bouillon and the beans (if you dont like them too overcooked could add later). Add the seasoning and stir slowly.
