I made this soup the other night ad it was delicious! We have a different version in Greece that is less thick and uses only pinto beans. This time though my mom let me make this so it was a combination of traditional and YUMMY! usually this soup gets to be frozen and used only in emergency situations, not this time though! I always encourage people to make it their own so if you have a way to make it healthier or even more delicious please tell me and i will try it out. =]

The ingredients for Greek Bean soup are:

one package of 15-bean soup mix (remove extra seasoning package it will not be used)
4 sticks of celery chopped
6 carrots choped
1 large onion chopped
1/4 of a jalapeno or 4 slices of pickled jalapenos (chopped)
3 cloves garlic minced
3 tbs olive oil
2 sweet potatos


FOR THE BEANS
10 cups of water
10 tsps of Chicken boullion

AFTER BEANS HAVE BEEN COOKED AND VEGETABLES ADDED

1/2 can tomato paste
2 cups of milk
1/3 cup flour


How Do I Make Greek Bean soup?

Here is how you make Greek Bean soup:

FOR THE BEANS1. start boiling the beans (not using the 10 cups of water or the Chicken Boullion) once boiled let them sit for 15 min. then drain.2. add the 10 cups of water and start them boiling again. once boiled again turn down the heat to a simmer and add the chicken boullion.START THE VEGETABLES3. add the oil to a sauce pan over medium high heat toss in the celery, onions, and carrots. saute them all together with a pinch of salt. 4. add the garlic and the jalapenos then let vegetables sweat.5. then add the sweet potatos. (these will cook quickly so either add them towards the end of the saute or just add them straight to the beans)6. once beans have become mostly soft add the vegetables and let them simmer till the beans are finished.FINISHING7. once the beans are done turn of the heat.8. in a bowl wisk the tomato paste and the milk together till the tomato paste has decome smooth. 9. whisk in the flour 10. stir into soup then let sit for about 10 min.i like to recomend a little bit of hot pepper flackes on top. Because the jalapenos are sauted they do not pack as much heat as you would think. =] For the people that do not like heat you can always take out the jalapenos. ENJOY YOUSELVES!
