Add 10 cups of water. I boil tap water in a large kettle ,then let it get down to a warm temperature.This water is better than using plain tap water.Let the beans soak overnight or for 6 to 8 hrs.Now you are ready to make your soup:)In a large heavy bottom soup pot, over medium high heat add 3 tablespoons of olive oil. sauté canadian bacon until lightly browned. lower to medium heat, add and sauté onions, celery, carrots, garlic, and Jalapeno pepper until soft and onions are translucent, about 10 minutes. Add sage and bay leaves.Add beans, with their soaking liquid. You should have 10 cups of liquid. Bring everything to a boil and boil for 5 minutes. Then bring to a very slow simmer ,cover pot and cook until beans are tender, about 2 to 3 hrs (cooking time may vary depending on freshness of beans). You may add water if necessary. Allow soup to stand for 10 minutes before serving, to concentrate the flavors. Season to taste with salt and pepper.
