Here is how you make JJ's 16 bean soup:

Rinse dried beans off well and place in a large stock pot. Fill with water to about 2 inches over top. Bring to a rapid boil and boil for 5 minutes. Cut off heat and place lid on stock pot and let sit for 1 hour. Over medium heat, melt butter in a skillet and saute' celery and onion until tender, add ham and heat.Once hour soak is done, add celery, onion and ham to the beans and cover with about 8 cups of water (may need more) and bring to a boil. Add better than bullion to boiling water and stir well. Cover and reduce heat to low and allow to simmer for 2 1/2 -3 hours. Serve with warm, hearty bread.
