3 tsp oil
6 cloves garlic, minced
10 green onions, chopped, keep whites separate
8 slices of ginger root (about the size of two thumbs), minced
2 seaquest shrimp rings - tails removed
1 T salt
1 can coconut milk (Aroy-D brand)
Malunggay leaves (if available)
200 grams fresh spinach

Here is how you make Mongo Soup (Mung Bean) with Shrimp:

Soak beans in 8 cups of water for 40 minutes then cook or just cook for about 1 hour. May need to keep adding water to the pot. When they are done the beans and water left should measure about 7 or 8 cups. Mash up beans in water.Sautee the garlic, ginger and whites of the onions in 3 tsp oil. Add shrimp and some of the salt and continue to sautee untill they are browned. Add a little of the coconut milk and cook a little longer allowing flavors to blend. Add this to the cooked mung beans. Add the spinach and when wilted, add the rest of the can of coconut milk and salt. In the Philippines they usually add malunggay leaves instead of the spinach.
