Drain the beans and add them, the ham bone, and water to the pot. Stir in all the spices, and half the parsley. Bring to a boil, reduce heat, and cook uncovered until beans are tender and liquid is reduced by 3/4s. (1-1/2 to 2 hours)Remove the bone, and cut off any meat on it, and put meat back into the pot.Add the remainig parsley, red pepper, sherry, suger and lemon juice.
