What Are The Ingredients For White Bean, Fennel and Sausage Soup Recipe?The ingredients for White Bean, Fennel and Sausage Soup are: 2 tsp. olive oil1 lb. sweet Italian chicken (or turkey) sausage, skinned and broken into small pieces 2 medium fennel bulbs (about 1 lb), coarsely chopped 2 medium onions, sliced 3 garlic cloves, minced 1/2 cup chopped fresh basil(or parsley), firmly packed 6 cups low sodium chicken stock 28 oz. can whole peeled tomatoes, including juice 2 cups cooked white bean, such as Great Northern or cannellini salt and pepper to taste optional: low fat cheese to top each serving How Do I Make White Bean, Fennel and Sausage Soup?Here is how you make White Bean, Fennel and Sausage Soup: In a large soup or stockpot, heat the oil. Stir in the sausage and cook over high heat until well browned, about 5 minutes. Drain fat if necessary. Lower the heat to moderate and add the fennel, onion, garlic and parsley. Cook until the vegetables are just crisp-tender, 10 - 15 minutes.Add the tomatoes with their juice to sausage mixture. Break the tomatoes up. Add the chicken stock. Bring to a boil over high heat. Lower the heat to low and simmer until all vegetables are tender, approx. 20 - 30 min. Prior to serving stir in beans and heat through. Season to taste with salt and pepper.
