Dice carrots, onion, celery, potatoes and garlic. In Dutch oven put about 2-3 tablespoons olive oil and put onions, garlic, carrots, celery and potatoes and italian sausage in and cook for about 5-10 minutes on medium. Add broth, bay leaves and spices. I added the tomatoes by just squishing them with my hand, you can smash them or chop them if you want. Add beef cubes if you want added flavor; add about 1/2 can tomato paste. Add smoked sausage.The beef cubes and tomato paste can be added to taste as you feel you want it after this has slow simmered for about 45 minutes or add when you start the simmering. After about 15 minutes simmering add the kale and cabbage.
