Soup Ingredients
28 oz. diced tomatoes no added salt
46 oz. tomato juice no salt added
14 oz. (1 bag) coleslaw mix (cabbage w/whatever)
1 cup diced onion
2 cloves garlic minced or diced
2 cups water
Any other seasoning to taste I did Italian this time will do Mexican the next just for a change of pace

Meatball Ingredients
1 lb. very lean ground beef
1/2 cup of Uncle Ben's Converted Rice
1/4 cup of VERY finely diced onion
3 stalks of VERY finely diced onion
1 Tbls. of Grated Parmesan Cheese
1/2 cup of hot water



How Do I Make Cookie's Cabbage Soup w/Meatballs?

Here is how you make Cookie's Cabbage Soup w/Meatballs:

Heat oven to 425. Mix all meatball ingredient together and form into 24 meatballs.. I use a 1 tablespoon scoop and that works out pretty good. Note I use a small food processor to chop the onion and celery for the meatballs. Put the meatballs on a baking sheet or baking dish. If can it is preferable to put on a rack so excess fat drips away. Bake for approx. 20 minutes just until they develop a crusty texture. Meanwhile while the balls are baking, put all soup ingredients in a stock pot or Dutch oven and simmer covered... depending on how tender you like your veggies you may want to hold back the cabbage just a little bit before adding to the pot.When meatballs are browned drain as much fat as possible and add to the hot soup. Continue to cook until the meatballs and cabbage are both done...be sure the rice in the meatball is thoroughly cooked and add more water if needed.. don't want crunchy rice :DThis should make about 12 cups of soup or 8 1 1/2 -cup servings.Serving Size: 8 1 1/2 cup servingsNumber of Servings: 8Recipe submitted by SparkPeople user 1STEPBACK.
