6 tsp chili powder, or to taste
1/2 small head of cabbage, red or green, sliced or shredded
1/2-1 cup fresh parsley, un-stemmed and torn by hand

Use a large dutch oven, or medium sized stock pot for this one!Slice mushrooms, if needed, and chop onions and green peppers. Spray the bottom of your pot with cooking spray and sautee mushrooms, onions and green peppers together until onions become translucent. Chop all other vegetable ingredients (except cabbage and parsley) and put into the pot with the onion mix. Add the can of tomatoes and stock, then bring to a boil. Reduce heat to med. high, and add spices to taste. Simmer together for about 10 minutes, uncovered. Add cabbage and simmer for 10 more minutes. Add parsley and simmer for 5 more minutes. Serve and enjoy! This is delicious with fresh, toasted bread and some cheese sprinkled on top (I really like gouda on this one!)The sodium content is high, so to reduce dramatically (or eliminate sodium altogether), use fresh chopped tomatoes, or salt-free or reduced sodium canned tomatoes. Also look in the chili powder ingredients-some brands are quite high in sodium.
