Here is how you make Gingery Carrot Soup:

Preheat oven to 350 degrees F. On a cookie sheet, mix carrots with 2 tbsp. of oil and 1 tbsp. of ginger and bake in the oven for 30 minutes. In a large pot on medium heat, fry onion and garlic in 1 tbsp. of oil for 4-5 minutes, or until onion is tender. Add turmeric and remaining 1 tbsp. of ginger and cook for a further 2 minutes before adding stock, coconut milk and carrots. Simmer for an additional 10-15 minutes. Remove from heat.
