Makes 4 generous servingsIn a stockpot, saute the baby onions and garlic in a small amount of oil or bacon fat (less than a tbsp.) until fragrant.Add the broth, tomatoes, and beans and allow the soup to come to a boil. Add the greens and turn the heat down to a simmer. Allow the greens to wilt, and then add the seasonings, herbs and spices. Cover and heat just enough to simmer gently for 45 minutes to an hour.
