During the middle of Storm Isaac flooding my front and backyard I felt like having soup. It was a soup weather. I thought a nice bug bowl of yummy veggies with some chicken would make me forget all about water taking over my house. So as soon as I realized I could not drive away in my little 2001 Toyota Corrolla my mom showed up in her truck (a 1998 For Expadition XLT). We went straight to the farmers market that was just about to close due to the weather, and I almost busted my butt twice due to my sandels and slippery floors (I really wanted this soup). Then we swinged by the grocery store to get some yummy chicken and to our surpirse boneless, skinless, chicne thighs were on sale BOGO (buy one get one free) to be exact, I felt like this soup was ment for me to make and serve myself a nice hot bowl. So right when I got out of my moms lovely truck that saved my day I fell right on my bottom I actually sliped and fell, so I just got my wet tush off the floor grabbed my groceries (thank god nothing fell out of the bag), changed my wet pants, and started that soup. It was probably the best soup I've ever made. I enjoyed to delicious bowls and 2 yummy corns.

Chicken (your choice but skinless and boneless is easier)
any veggies of your choice: I added
sweet potato
white potato
carrots
chayote (or any other squash)
onion
yellow bell pepper (opional)
I added low sodium chicken broth and bouillon


How Do I Make In the Middle of Storm Isaac Soup?

Here is how you make In the Middle of Storm Isaac Soup:

Pour a little bit of olive oil into pot and saute chopped onions and a little bit of diced garlic. Grab chicken and season with whatever you want (I used adobo without pepper by goya and yellow food color powder it gives the chicken a color). Place chicken in pot and cover the pot. Pour in a little bit of cooking wine just so that the chicken can release some flavors. Start chopping your veggies how ever you decire but make sure to place the harder veggies in pot first., For example, I placed carrots first, then potato & sweet potato, then at the last minute I added chayote and corn. After adding your veggies mix around pot (without any liqid at all just the juices from the chicken and the cooking wine that was added). Cover pot finish chopping the rest of your veggies. Grab a large mug and por about half of it with chicken broth or water and heat up in microwave for a minute, once you remove from microwave place chicken bouillon (better low or no sodium), let bouillon desolve. Once that is done add your broth/bouillon mixer, add 1 more cup of chicken broth and 1 cup of water, cover pot. Once the soup is boiling you place the chayote and the corn. Lower heat and let it simmer, at this point you just let the soup do its thing. About 10-15 mins after lowering heat you turn off the heat and when ever you are ready you eat your delicious soup.Serving Size: 6-8Number of Servings: 8Recipe submitted by SparkPeople user IHEARTJOJO.
