What Are The Ingredients For Jen-Jen soup Recipe?The ingredients for Jen-Jen soup are: approx 2# of red potatoes- simi peeled and sliced/chopped1 onion chopped 5 cloves of garlic pressed or minced chicken broth (1 large box/carton) 2 c milk 5 TBS (or more) of pesto (about half of a small jar) 2 TBS butter 2 C cooked pasta (I used elbow macaroni... mini shells might be better... or use whatever you have) How Do I Make Jen-Jen soup?Here is how you make Jen-Jen soup: saute potatoes, onion, garlic with the olive oil over a low/med heat for about 10 minutes. I also added some ground pepper & salt while browing this.While you are cooking the potatoes, you can cook the pasta. In a larger pot, heat the broth and milk. Once you have cooked the potato mixture, scrape that into the broth/milk. At this point you can add some red pepper flakes to give it a little "kick". Cook another 10 minutes to soften the potatoes a little more. After the 10 minutes, add the pasta, pesto and butter. Simmer an additonal 5 min. or so. Sprinkle with parm cheese... Serve with french bread or a salad or both!!! ;)I think this would be really good with some spicy ground italian sausage added too. I might cut back on pasta next time and possibly add some spinach to it.
