This soup relies mainly on it's sweated shallots, leeks and onion for it's base flavor. I used predominately green vegetables, as this recipe is an off-shout of Kirstie Allie's Green Soup Recipe (which can be found on Oprah's web-site...or my recipe file) and I just tweaked it a bit by adding other things from my refridgerator that wanted to jump in (well...let's be honest...they needed to be used.) I thought they would compliment that particular recipe...hence: Mama Christine's Soup du Jour.

Shallots, 16 tbsp, (or 1 cup) chopped, thinly sliced
Leeks, 6 cups, sliced into 1/2" to 1" slices
Onion raw, 1 medium (2-1/2" dia)
Jalapeno Peppers, 2 peppers
Asparagus, fresh, 3 cups, cut into bite size pieces
Fenugreek Sprouts, 1 cup
Dandelion Greens, 3 cups
Beet greens, fresh, 3 cups, cut up (stems and all)
Cauliflower, raw, 5 cups, cut up
Broccoli, fresh, 6 cups, chopped
Spinach, fresh, 4 cups
Kitchen Basics Vegetable Stock, 4 cups
Progresso 100% Natural Chicken Broth - reduced sodium, 24 cups

Here is how you make Mama Christine's Soup du Jour:

Makes 44 - 1 cup servings (though it's hard to have just one cup...this soup is so good)Sweat the shallots, leeks,jalapenos and onions in the olive oil until tender. Add the asparagus pieces and continue sweating until tender. If the veggies are drying out, add about 2-4 cups of broth to soup pot and cover to allow them to seat and put heat on simmer.Add the fenugreek, dandelion greens, beet greens and stems to the pot. Add about 4-6 cups of the chicken broth as well. Cover and continue simmering until the greens and stems are tender.Add cauliflower and broccoli to the pot. Add the remaining chicken broth and the vegetable stock. Turn heat to low and continue cooking on low with the lid on. Cook for about 10 minutes. You want the broccoli cooked but not overcooked.Throw in the spinach and stir into the soup. Turn heat off immediately and allow to set on the stove for about 20 minutes.Add soup in batches to a food processor or electric blender. Be sure to allow room at the top for expansion when the soup is being "creamed" so that the hot soup does not come out of the top and burn you. Be very careful to hold the lid in place while blender/processor is on. The soup is hot and will burn if you are not careful.Soup can be frozen in batches for enjoying later in the week/weeks to come. And don't be afraid to tweak this recipe by adding whatever green veggies you have lying about. It's the onions, leeks and shallots that I would be sure to follow as much as you can. They are what give this soup it's full-bodied flavor.Enjoy!
