1 T. bacon drippings
1 onion
2 ribs celery
4 carrots, 1 finely diced, 3 thickly sliced
6 tsp. chicken-flavored better-than-bullion mix
12 c. water
1-1/4 lb. boneless chicken thighs, diced
1/2 lb. fresh egg noodles


How Do I Make Soup du Jour?

Here is how you make Soup du Jour:

Heat drippings over medium heat. Add onions, celery, & finely diced carrot. Cook till all are soft, 8-10 minutes, but be careful not to let them brown. Dissolve bullion mix in water, then add to vegetables in pot, scraping to loosen any bits stuck to the bottom. Cook at a low simmer for 15-20 minutes, till vegetables begin to break up. Puree if desired at this point (will give you a thicker broth). Add carrot slices and cook at a simmer for 10 minutes, then add chicken bits and cook for 5 more minutes. Finally, stir in noodles and cook a minute or so more, till noodles are tender. Serve.
