1 cup chopped celery
1 cup chopped onion
3/4 cup chopped green pepper
2 cloves garlic chopped
6 ounces ham diced small
1 t paprika
1/2 t each: dry mustard, ground cumin, dried basil, dried oregano and dried thyme
1/4 t ground cloves - if you are not found of this I would leave out as it is very noticeable in the flavor
1/4 t black pepper - I use more
1/8 t cayenne pepper
1 can black eyed peas, rinsed and drained - I substitute any peas that I have (white, black, kidney, etc.)
1 14 1/2 oz can diced tomatoes
1 14 1/2 oz can chicken broth - I use fat free
1 T snipped parsley - I used about 1 t dried
1 T molasses

Here is how you make Zydeco Soup:

Recipe also calls for can of golden hominy rinsed and drained which I do not use and 2 T olive oil to cook the first four ingredients in before adding the rest, but because I do not make in on the stove top, I omit this step.If you are making it on the stove top, after you cook vegetables for five minutes add everything else and simmer for 30 minutes.
