1 cup sliced carrots
1/2 cup chopped celery
16 cups water
1 (28 oz) can crushed tomatoes
1/3 cup mixed beans
1 1/2 tbsp salt (to taste)
3 tbsp sugar (to taste)
1 tsp pepper
3/4 tsp garlic powder
1 bay leaf
1 tsp basil
1/4 tsp celery seed
2 tbsp minced fresh parsley
2 tbsp minced fresh coriander
1/4 tsp chili powder

Here is how you make Safari Soup:

Serves 4 -8Directions: Brown sausage and put in stock pot. Saute or sweat vegetables (garlic, onions, carrots, celery) in covered pan until softened. To the stock pot add the above plus water, sausage, tomatoes, salt, sugar, pepper, garlic powder, basil, celery seed, coriander, parsley, chili powder. Simmer 2 to 5 hrs (until beans are soft).
