Heat oil & saute meat. Add onion,garlic & peppers.Cooking about 5 minutes. Stir in remaining ingredients, except for mushrooms, cilantro and parsley. Cover & simmer 20 minutes. Stir in mushrooms, cilantro and parsley. Cover and simmer 10 minutes longer.
