1 T olive oil
1 T smart balance light
1 medium head of cauliflower
1 lb of green garlic bulbs (or 3 large leeks)
2 small/medium potatoes, any kind - diced
1 carrot or a few baby carrots
1/4 C soy milk (any milk is fine)
1 tsp bay leaf
salt to taste
white and black pepper to taste
1/2 tsp ground cumin
1/2 tsp tumeric (optional, if available)
parmesan cheese, grated for garnish


How Do I Make Cauliflower and Garlic Soup?

Here is how you make Cauliflower and Garlic Soup:

* Slice green garlic or leeks and use only white to pale/light green parts. (I save dark green parts for homemade vegetable broth.)* Cook garlic/leeks for 2 minutes in olive oil and butter alternative.* Add cauliflower pieces and continue to cook another 5 minutes over medium heat. * Add 1/2 C vegetable broth and continue to cook for another 10 minutes.* Add potatoes, sliced carrots, crushed bay leaf, remaining vegetable broth. Cover and cook for an additional 40 minutes, stirring occasionally.* Turn off heat and let cool slightly. When cool enough to handle, blend soup with 1/4 cup milk.* Add salt, white and black peppers, cumin, tumeric (if using) to taste.* Reheat and serve garnished with 1 tsp grated parmesan cheese per serving.
