2 tbsp Extra Virgin Olive Oil
2 c chopped Carrots
2.5 c chopped Onions
2 c chopped Celery
1 package (10 oz) Spinach, fresh - chopped
1 c chopped Sweet mini peppers (bell)
5 cloves Garlic, minced
32 oz (4, 8oz pkgs) Hormel Cure 81 Diced Boneless Ham
drained and rinsed
3.5 c (2.5 lbs) Dried Split Peas, rinse well.
2 tbsp Pepper, black
2 tbsp Onions, dehydrated flakes
2 tbsp Poultry seasoning
(For low sodium use Mrs. Dash or the like)
1 tbsp Garlic powder
8 c Chicken Stock Organic (can substitute low sodium or water)
2 c Water
Optional: seasoning packet found in the dried split peas


How Do I Make M4G's Loaded Split Pea and Ham Soup?

Here is how you make M4G's Loaded Split Pea and Ham Soup:

In large 8 qt pot, heat Olive oil on medium (set to 4-5, depends on your burner). Add onions and stir. Lightly saute onions for about 2 minutes. Next add carrots, stir, and saute for about a minute then add celery. Add minced garlic. Saute all for about 2 more minutes. The veggies should be bouncy but not crisp (avoid cooking to mushy). Set chopped spinach and peppers aside. Next, add ham to 8 qt pot. Then add rinsed peas on top. Put all dry seasonings on top of peas. If the dried peas had a seasoning packet and you'd like to use it, add it too. Add 8 c of chicken stock and 2 c of water and stir. Increase heat to high and bring soup to a boil. Boil for 3 minutes but stir to keep from sticking to the bottom of the pot. After 3 minutes, turn heat down to med-low (2-3 setting), stirring occasionally. Let simmer with lid askew for 45-60 minutes or until peas are fully cooked and falling apart to form a thick soup texture. Stir to break-up the peas. 15 minutes before coming off the heat, add spinach and mini sweet peppers. The soup is ready when the spinach and peppers are tender and the peas are at a smooth consistency.
