Here is how you make Split Pea Soup with Ham Shank:

Fill a large pot with 24 cups of water. Add 1 medium onion (diced), 2 medium carrots (diced), 4 garlic cloves (diced), and 1 lb. ham shank and bring to a boil. Allow to boil for 30 min. Remove ham shank and dice into cubes (remove bone). Add ham back to soup and add split peas. Allow to boil for 2 hours or until thickened. Soup will be thick but still somewhat runny.
