16 oz 80/20 ground beef chuck
16 oz Pork, fresh, ground, raw
7 large Carrots, julienned or shredded
3 stalk, Celery sliced small
2 cup Onions, small dice
2 parsnip julienned or shredded
3 medium Potato, 1/2" dice
2 cup Sourkraut juice (juice squeezed from 16oz bag)
4 tbsp Parsley, minced
2 large Egg Yolks
4 1/2 quarts Water
1/4 cup Canola Oil
1/2 cup long grain white rice, washed
2 tbsp Salt


How Do I Make Meatball Soup (Ciorba de Perisoare)?

Here is how you make Meatball Soup (Ciorba de Perisoare):

julienne or shred carrots & parsnips. Chop celery and dice onion. Reserve 1/4c diced onion. Heat oil in lg stockpot then add carrots, parsnip, celery & onion. Cook and stir, add salt & continue to cook & stir over medium-high heat until vegetables are soft and parsnips start to look nice and yellow from the carrots. Once parsnips are yellow add water and bring to a boil over high heat. Meanwhile mix ground meat, 1/4c washed rice, reserved onion, 1TBSP salt & 1TBSP minced fresh parsley mix well. Once soup is boiling start rolling small meatballs about 1inch and drop into soup as you go. Once all meatballs are added reduce heat to medium-low simmer at a slow boil and remove any scum and fat that rises to surface. Cook stirring occasionally for 20 min. Meanwhile peel and cut potatoes into 1/2" cubes and cover with cold water to prevent discoloration. After the soup with meatballs has cooked for 20 minutes drain potatoes and add to soup along with remaining rice. Continue to cook for 20-30 minutes then add sourkraut juice (squeezed from 16oz bag). Put egg yolk in small bowl and whisk while slowly streaming in some of the hot soup (to temper and prevent it from cooking and stringing when adding to soup) then add to soup along with parley. Remove from heat and serve.
