100 grams Dried mushrooms
Water to cover

1/2 cup Shallots, chopped
1/2 cup Onions, raw, chopped
2 cloves of Garlic, minced
2 Tbsp olive oil

8 oz Shiitake Mushrooms, sliced thin
8 oz of some other wild Mushrooms, sliced thin
6 cups Swanson Chicken Broth 99% Fat Free,
2 cups water
1 Tbsp Seasoning Salt (to taste)
1 Tbsp Cajun seasoning (to taste)

How Do I Make French Mushroom Soup?

Here is how you make French Mushroom Soup:

Place the mushrooms in large bowl and cover with water. I place a plate over them to keep them immersed. Soak for 20 minutes or until soft. Remove the mushrooms to a stock pot and strain the liquid into the stock pot (this is the start of the broth). Chop the shallots, onions and garlic, keeping garlic separate. In a pan, heat the oil and then add the shallots and onions. When these are nearly done, add the garlic for a few moments. Transfer the onion and garlic mixture into the stock pot containing the mushroom broth and mushrooms. Add the chicken broth, water, and seasonings, to taste. Simmer until the fresh mushrooms are cooked down. (This is where I stop if I am making the soup ahead of time). Serve with croutons. For a more elegant presentation, transfer soup into individual serving dishes (ramekins), place croutons and some gruyere cheese on top and broil until bubbly.ENJOY!Number of Servings: 8Recipe submitted by SparkPeople user KRISTINA75.
