2 medium carrots, peeled and diced
2 celery stalks, diced
1 pound fresh white mushrooms, stems trimmed, and thinly sliced
Salt and ground black pepper
1/2 cup barley
1/4 cup minced fresh Italian parsley

Here is how you make PORCINI MUSHROOM AND BARLEY SOUP:

1. Place the porcini mushrooms in medium bowl, cover with hot water, and soak for 20 minutes, Lift mushrooms from liquid with a slotted spoon and chop. Strain soaking liquid through colander lined with paper towels. Reserve mushrooms and strained soaking liquid separately.2. Meanwhile, heat oil in large soup kettle or stockpot. Add onions, carrots and celery; sauté over medium heat until softened slightly, about 5 minutes.3. Add sliced fresh mushrooms and raise heat to medium-high. Cook, stirring often, until mushrooms throw off their liquid, about 6 minutes. Season vegetables generously with salt and pepper.4. Add porcini mushrooms, soaking liquid from porcini mushrooms, and 4 cups of water to pot. Bring to boil and simmer for 5 minutes to combine flavors.5.
