4 cup (8 fl oz) Chicken Broth, or 1 carton
16 oz Tilapia filet (four 4-oz filets)
4 garlic cloves
1 cup Portabella Mushrooms, sliced
1.5 cup Carrots, chopped
3 tsp Pepper, black
1.5 cup, Onions, 1 and 1/2 onions chopped, 1/2 onion slivered
2 tsp Canola Oil
3 tbsp flour, all purpose
1 can or bottle (12 fl oz) Light Beer, room temp


How Do I Make Tilapia and Mushroom Soup?

Here is how you make Tilapia and Mushroom Soup:

If tilapia is frozen, place in bowl of lukewarm water and set aside to thaw. Pour oil into saucepan (3+ quart capacity) over medium-high heat. Add minced garlic and let simmer. Before garlic starts to brown, add chopped onion. Mix garlic and onion. Spread mixture evenly, covering whole surface of saucepan. Let simmer for 2 min., stirring to prevent carmelizing. Add carrots and sprinkle pepper over vegetables. Mix thoroughly. Spread vegetables evenly over surface and let cook for 2 min., stirring occasionally. Sprinkle flour evenly over onion/carrot mixture. Mix well, and keep stirring continuously for 2 min. Slowly pour in beer while whisking into vegetables. Slowly pour in chicken stock while continuing to whisk. Bring to a boil over high heat, whisking occasionally. Carefully drop tilapia into soup and stir. Once boiling, reduce heat to medium. Add 1/4 slivered onion and sliced portabellos. Once soup begins to boil again, turn heat to low. Let simmer for 25 min. Use a spatula to cut tilapia into bite-sized pieces.
