Melt butter add shallots saute until softened. Add mushrooms and thyme and cook for a few more minutes. Sprinkle in flour and cook 2 min. Stirring constantly. Add stock and bring to a boil Turn down to a simmer and cover and cook 15 minutes. Stir in half and half sherry salt and pepper if desired and bring to a simmer. Mix in parsley and serve. If you use all ingredients listed this will make an additional 2 cups which may be used for a green bean casserole.
