2 c. sliced onions
1 clove garlic (diced)
4 c. chicken broth (I use Swanson Natural Goodness)
1 c. chickpeas (I use canned, rinsed and drained)
fresh thyme (leaves off a couple of sprigs)
1 bay leaf
red pepper flakes (to taste)
salt (to taste)
fresh ground black pepper (to taste)


How Do I Make Chickpea Onion Soup?

Here is how you make Chickpea Onion Soup:

Using a nonstick pot coated with non-stick cooking spray cook onions over medium heat until translucent. Add garlic, cook one minute. Add chicken broth, chickpeas, fresh thyme, bay leaf, crushed red pepper flakes, salt and pepper; bring to a boil. Simmer 10 minutes. Remove bay leaf before serving. Makes 4 servings.Feel free to sub ingredients. Vegetable or beef broth would work great. I think I added a dash of celery seed while I was making this. If you don't have any fresh thyme you can use a teaspoon of dried thyme or other herbs (fresh or dried) you may have on hand.Number of Servings: 4Recipe submitted by SparkPeople user QUERIAN.
