This is my mom's parsley soup, which has become a traditional family meal on cold winter nights eating in front of the fireplace. This soup is rich in flavor and heavy enough to be eaten as a main course. I recommend serving with a small salad on the side and a big loaf of a crusty bread (sourdough or French baguette, for examples) for dipping in the soup.Cooking notes: *Instead of using chicken bouillon, you can use a vegetarian bouillon (I have used vegetable, mushroom, and herb bouillons). This substitute turns this recipe into a delicious vegetarian meal.*I use instant nonfat dry milk in this soup. You may substitute this for 1 1/2 cups regular nonfat milk. If you want a creamier soup, you may use milk with fat or even some cream.I use salted butter in this recipe, and rarely add extra salt. Salt to taste, but remember that extra salt is not counted in the nutrition info for this recipe. Bon appetit!

1 whole bunch of fresh parsley (curly or flat leaf), about 2 cups (do not chop!)
1 whole onion, peeled
1 cube chicken bouillon
5 cups water

3-4 potatoes, diced into bite-size chunks (peel or not, per your preference)

3/4 cup dry nonfat milk
1 cup water
1/4 cup cooking sherry
1/2 cup chopped fresh parsley
ground black pepper, to taste

1/2 cup salted butter
2/3 cup whole wheat flour

Potato flakes (optional - 1/4 cup included in nutrition info)

Here is how you make Bonnie's Parsley Soup:

In large pan place the bunch of parsley, whole onion, bouillon, and 5 cups of water. Bring to a boil, then simmer for at least an hour. (This creates the broth that will be the base of your soup.) Remove onion and cooked parsley (I always press the parsley to get every last drop of flavor out of it) from the broth.Boil diced potatoes until soft, about 10 minutes. Add boiled potatoes to the broth.Mix dry milk with 1 cup water until all powder is dissolved. Add milk mixture to your soup pot. With soup on a low heat, bring soup to a boil. Be careful not to let the soup burn or scald.While the soup is coming to a boil, melt butter then add flour. Mix until all the flour is thoroughly dissolved. Add a bit of the boiling soup broth to this thickener, and stir until well blended. Add thickener to boiling soup, mixing well. Simmer soup (the thickener will begin to work as the soup cools).
