Wash split peas and cull any that are poor quality. Add peas and 12 cups water to a large soup pot. Add the rest of the ingredients and bring to a boil. Turn heat down to medium low and let simmer for 3 hours, stirring occassionally. After peas are cooked, mash with potatoe masher/ricer.
