Makes at least 16 3/4 cup servings.Chop the veggies in a medium dice. Chop up the Canadian bacon. Saute the veggies all together in the olive oil over medium heat about 10 minutes until sweated and soft. Add Canadian Bacon, and herbs, and saute about 5 minutes more. Add split peas, broth and water. Simmer about two hours, until peas are mushy.Remove the bay leaves.I use an immersion blender to blend about half the soup, leaving the rest chunky.
