Here is how you make Split Pea Soup with Hamhock:

Saute the onions, carrots, and celery in the olive oil over medium-high heat for about 3 minutes in a pot big enough to hold all indredients. Add 1 hamhock, chicken broth, water, and split peas. Cook for about 45 minutes. Take hamhock out. Puree (or skip this) some or all of the soup with an immersion blender or a regular blender. Add water to thin to the consistency you like (pureeing it makes it thicker). Pull meat from hamhock, separating out the fat. Chop into small bits and add back to pot.
