1 medium onion, chopped
1 T butter, unsalted
2 c. fat free, low sodium chicken broth
salt and pepper to taste

How Do I Make Spring Pea Soup?

Here is how you make Spring Pea Soup:

In a medium saucepan, add peas, onion, butter and chicken broth. If broth does not cover veggies, add a bit of water until it does. Bring to a boil, then reduce to a simmer, stirring occasional. Allow to simmer until onions are tender, but peas are still bright green. Usually takes about 10 minutes for me.Makes about 6 servings.Allow to cool slightly, transfer to blender or food processor and puree until smooth.Transfer back to saucepan and heat through.
