3 Cups Leeks - (sliced) (green & white portions)
About 2.5 lbs of red potatoes - peeled and quartered
1 tsp garlic - minced
4 tbsp Heavy whipping cream or 1/2 & 1/2 (optional)
6 cups fat free chicken stock
Red pepper flakes (dash)


How Do I Make Creamy Potato and Leek Soup?

Here is how you make Creamy Potato and Leek Soup:

First prepare all of your vegetables - if you wait until after you've already started, then you will be scrambling around. Wash and slice your leeks (removing brown stems), set aside. Peel and quarter the potatoes, set aside. Mince your garlic, set aside.Then in a large pot, pour in about 1/4 cup of water (or butter if you wish) and the sliced leeks and saute on medium until soft (about 3-4 minutes). Then add your garlic and saute about another minute or until golden brown. This is just to bring out the flavor. Add your potatoes, chicken stock and dash of red pepper flakes. COVER, and boil on medium high for about 30 minutes or until all veggies are soft. Remove from heat, add your whipping cream and begin mashing everything in the pot with a whisk, or blend depending on if you want it creamy and smooth or to have a bit of texture. You can add salt and pepper to taste, but the chicken stock already contains salt. Also, for non vegetarians you can add chopped up cooked andoulle sausage.
