Heat oil in large saucepan; add onion and cook until soft (about 2-3 min). Add stock, plus 2 cups water. Then add sweet potato, carot and ginger. Bring to a boil, reduce heat and simmer until veggies are tender (approx 15 min).Puree in blender / food processor until smooth (you may have to do this in batches, depending on size of blender).
